This incredibly moist, delicious cake will be the best use of leftover porridge you can imagine.
1/2 cup butter
1 1/2 cups sugar
2 eggs
2 cups cooked porridge
1 1/4 cup flour
2 tsp baking powder
1/2 tsp salt
2-3 tsp cinnamon
Optional extras: Diced apple, or other fruit, chopped nuts,
Method
Preheat oven to 180C fan bake
Cream together the butter and sugar. Beat in the eggs and porridge.
Sift together flour, baking powder, salt and cinnamon (and any other extras eg. nuts). Add to creamed
mixture and mix well.
Pour into greased and floured 26cm cake tin
Bake for 35 minutes or until it tests done.
Top with the icing of your choice. I use a simple vanilla icing, using icing sugar, vanilla, butter and hot water.
