Blueberry Chutney
Ingredients
3 cups blueberries, fresh or frozen
1 medium onion, finely diced
1 clove garlic, minced
1 tablespoon grated fresh ginger
1/3 cup apple cider vinegar
1/2 cup white or brown sugar (use what you have)
1/2 cup raisins or sultanas
- 1 tblsp cornflour
1/8th tsp cinnamon
1/2 tsp turmeric
1 pinch of salt and a good grind of pepper
Wash and destalk blueberries
Combine all ingredients in a medium pot, then bring to boil over medium heat
Once boiling, reduce to a low heat
Stir frequently and simmer for 15 minutes
Pour into sterile jars and cap immediately. Any jars that don't seal will keep in the fridge until your family finds it.
Serve with cheese, meats, and vegetables. Honestly, this is good enough to eat straight from the jar with a spoon.
